Ingredients For Quick and Easy Budget Chili:
1 15.5 oz can kidney beans
1 15.5 oz can chili beans
1 Teaspoon Spike Onion Seasoning
1 Big 28 oz can of whole or diced tomatoes (2 cans of rotel can be substituted)
1 Large bell pepper any color
1 drained can sweet corn (or one cob cut)
1 large onion minced
3 cloves of garlic minced
1 pre-mixed packet of chili powder + 1 tsp chili powder
1 pound ground beef
Mince Onion and Garlic
Dice Bell Pepper Make sure you seed the pepper. Throw away or store seeds, but do not add the seeds to the recipe.
Add ground beef to a 5 quart pot and brown for 2 minutes.The ground beef should have produced some grease for the pan by now, so add onion, garlic, and bell pepper. Finish browning beef with the onion, garlic, and pepper.
Add all canned items with juices except the corn. Make sure you drain all juices from the canned corn.
Slowly stir in the seasoning packet, Spike Onion Seasoning, and chili powder.
Simmer for 10-15 minutes stirring every couple of minutes.
Serve with crackers, bread rolls, baked potatoes, cornbread, fritos, cheese, or yogurt.
This is a very basic chili recipe for nights when cooking from scratch or making a big meal simply isn’t an option.
As a stay at home mom I usually have time to make scratch meals, but since the kids have gotten older and we have more errands to run around to this has become a great quick fix. It’s also super cheap so when I am feeding 2 boys who eat like grown men it helps stretch the budget a bit more.
